fa بررسی آلودگی های باکتریایی در محیط آشپزخانه برخی از بیمارستان ها پژوهشي Research <p><strong>  مقدمه:</strong> محیط آشپزخانه ، میز تهیه غذا ، ظروف ، مایع ظرفشویی و غیره در معرض آلودگی با باکتری های مختلف قرار دارند و باکتری ها از این طریق می توانند به بیماران نیز انتقال یابند. هدف از این بررسی ، تعیین میزان و نوع آلودگی باکتریایی در محیط آشپزخانه در برخی از بیمارستان ها است. </p><p><strong>  روش بررسی:</strong> در این بررس توصیفی ـ تحلیلی 4 بار از محیط اطراف آشپزخانه طروف شسته شده آماده مصرف ، میز تهیه غذا ، یخچال ، سردخانه و مایع ظرفشویی نمونه برداری شد و باکتریهای ایزوله شده با روش های استاندارد شناسایی گردیدند . </p><p><strong>  یافته ها :</strong> نتایج نشان داد که باکتریها در ظظروف شسته شده ، میز ، مایع ظرفشویی و سایر سطوح آشپزخانه وجود داشتند. فراوان ترین باکتریهای یافت شده شامل انتروباکتر ، اشریسیاکلی و کلبسیلا بودند . </p><p>  <strong>نتیجه گیری :</strong> باکتری های روده ای که نشان دهنده آلودگی با مدفوع است در سطوح مختلف آشپزخانه یافت شد. بنابراین ، بر افزایش آگاهی و کوشش جهت رعایت بهداشت در بیمارستان برای کنترل عفونت تاکید می گردد. </p> <p><strong>Introduction:</strong> Kitchen environment, food preparation tables, dishes, washing liquids,…. etc are at risk of being exposed to different bacteria that can be transfered to patients. The objective of this survey was to determine the bacterial contamination in Kitchen environment in some hospitals. </p><p><strong>Methods:</strong> In this analytical descriptive study, 4 times samples were taken form kitchen environment, washed dishes, food preparation tables, freezers, cold room, washing liquids. Isolated bacteria were identified by standard methods. </p><p><strong>Findings:</strong> Our results showed that bacteria were found in washed dishes, tables, washing liquids and other surfaces in the kitchen.
